Beef Stew with Beer Biscuits

A couple of months ago, I made beef stew and beer biscuits for dinner.... they were both delicious. I did  have a little trouble with the shape of the biscuits. They came out a little flat, but still tasted good. Not sure what happened. I wonder if it was the type of beer I used... Coors Light (didn't want to use the good stuff while cooking. Thought I'd keep that for drinking. ;))?

I plan to make this again at some point so I will check back in when I do if I have better success. If anyone has any thoughts around the type of beer feel free to comment. I'd love to hear your thoughts.

*I didn't use the parsnips and turnip. I used good old fashioned russet potatoes instead. One of these days I'll be more adventurous around trying the other veggies.

* I used a pre-made baking mix.... I wonder if this or the beer made them flat?

  1. Yum! That beef stew sounds awesome. I'm going to try that soon.

    I've had turnips before, but only mashed, with brown sugar and a little butter. They're pretty good but you really have to make sure they're cooked through. They were peeled, chopped and boiled, then mashed.

    I think I tried to make parsnips before and didn't cook them enough and they tasted very bad, like chemicals.

    Was your baking mix fresh? If the baking powder was old it would be less effective in making them fluffy.

  2. I thought the baking mix was fresh, but it definitely wasn't brand new. It wasn't that old though.....

    I might stick with the potatoes and maybe try some butternut squash or something next time.

  3. I was listening to the America's test kitchen podcast yesterday and they talked about biscuits; their tips included being careful to not overwork the dough before cutting it into biscuits.   4. I'll have to check it out. This recipe actually had me spoon the biscuit mix onto the pan... but you might be right about the mixing. I don't think I've mastered that yet. ;)
